Biskut Udang Kering (Ikan Bilis)

Bahan2nya:-
100g mentega
150g self-raising flour
100g udang kering ditumbuk (ikan bilis goreng ditumbuk)
Sedikit lada (pepper)
Sedikit garam (jgn terlalu masin sebab udang kering/ikan bilis dah masin)
1 biji telur kuning
Hirisan daun bawang & daun sup (optional ¨C jika suka)

Cara2 membuatnya:-
1. Tepung bersama garam & lada digaul sebati. Baru masuk mentega & gaul sampai jadi mcm breadcrumb.
2. Baru masuk telur, udang kering (atau ikan bilis) & daun sup/daun bawang. Gaul rata sampai jadi dough. Simpan dlm peti sejuk selama 1 jam. Baru canai, sapu kat atas biskut dgn kuning telur & bakar dlm oven mcm biskut lain. (Kalau kakak saya dia potong2 mcm mancis & tak sapu kuning telur.)

PS. Saya biasanya goreng tepung tanpa minyak dlm kuali sebelum digunakan. Cara ini boleh membuat biskut cepat masak & tak hangus kat bwh dia.

Rojak Aneka Sayur & Ayam

Bahan A

Ayam digoreng (dipanggang pun boleh ikut citarasa masing2)

Cucur (tepung campur garam, jintan, udang, sayur kuchai, telur & digoreng crispy)

Timun (dihiris memanjang mcm mancis)

Sengkuang (dihiris memanjang mcm mancis)

Taugeh (dicelur dlm air panas sekejap)

Telur rebus

Kentang rebus dipotong dadu

Bahan B utk kuah:-

Sweet potato direbus & dilecek lumat

Atau

10 keping roti crackers Jacob/Tiger ditumbuk lumat

Cili kering (kalau nak pedas boleh tambah lagi)

3 – 4 ulas bawang merah

Sedikit serbuk ketumbar, serbuk kari & jintan putih

Gula & garam secukup rasa

Minyak utk menumis


Cara2 membuatnya:-

  1. Tumiskan cili kering+bawang merah yg ditumbuk lumat bersama serbuk ketumbar/kari. Bila sudah keluar minyak, masukkan sweet potato atau roti crackers. Baru tuang air, garam & gula. Jika kuah terlalu pekat tambah sedikit air. Biarkan menggeledak guna api perlahan utk pastikan kuah benar2 masak.
  2. Hidangkan bersama bahan A.

Nasi Beriyani Segera

Bahan2nya:-

3 mangkuk nasi putih
2 ulas bawang merah
2 ulas bawang putih
2 sudu makan serbuk kurma
1 sudu kecil serbuk kunyit
1 sudu besar sos tomato
Sedikit susu cair
Garam & gula secukup rasa
Sedikit minyak utk menggoreng

Cara2 membuatnya:-

Bawang merah & bawang putih ditumbuk lumat. Tumis hingga warna keemasan. Baru masuk serbuk kurma, kunyit & sos tomato. Kacau hingga keluar minyak baru masuk susu cair. Kacau lagi hingga nampak pekat & keluar minyak. Baru masuk nasi, gaul hingga sebati. Masuk garam & gula. Bila masak hidangkan bersama poppaddam, acar timun, yogurt & ayam goreng.

PS. Ayam goreng saya campur dgn Quaker’s Oat.

Mee Udang Kering

Bahan2nya:-

4 keping mee kering

1 ikat sayur kangkung dihiris

1 ikat daun bawang dihiris

Segenggam udang kering

Sedikit isi ayam

Gula & garam secukup rasa

Sedikit minyak utk menumis

Cara membuatnya:-

1. Mee kering direbus & tos bila sudah masak & basuh dgn air sejuk sp. mee tak lekat2.

2. Panaskan kuali dgn sedikit minyak & tumis udang kering yg sudah ditumbuk & daun bawang. Gunakan api perlahan utk menumis. Masukkan garam & gula secukup rasa bersama isi ayam.

3. Bila bahan2 sudah masak baru masukkan mee & sayur kangkung. Gaul hingga sebati & kangkung masak.

Khas utk Babybueno

Salam Baby,

Senang je resipi Mee Maggi perasa asam modify jadi Laksa Ganu.



Bahan2nya
1 bungkus Mee Maggi perasa asam
3 sudu tuna (yg dlm tin)
1 ulas bawang merah
1 ulas bawang putih
sedikit cili merah
sedikit bunga kantan
sedikit serai
daun singkel dihiris
hirisan bawang besar/timun
garam secukup rasa
perahan limau kesturi

Cara2 membuatnya
1. Rebus mee & tos.
2. Bawang merah+bawang putih+cili ditumbuk baru tumis. Masuk serai & bunga kantan. Baru masuk air secukupnya. Rebus hingga menggeledak & bunga kantan/serai meresap. Lepas tu buang serai/bunga kantan.
3. Bila kuah dah menggeledak baru masuk perasa Maggi asam bersama tuna & last sekali daun singkel.
4. Dah masak tuang ke atas mee maggi. Hiaskan dgn hirisan bawang besar & timun. Perah limau kesturi. Memang sedap banget!

PS. Boleh bubuh sedikit santan utk menyedapkan lagi.

Nasi tomato & sambal goreng udang





Tiba2 teringin nak makan nasi tomato bersama sambal goreng udang galah. Memang yummy sgt. Tak teringat nak buat kurma udang. So far tak pernah cuba buat kurma udang. Mesti boleh tahan sedap mcm kurma ayam.

Utk silent reader, this is the recipe.

Bahan2nya:

segenggam udang kering direndam dlm air
cili merah (agak2 je lah)
2 ulas bawang merah
2 ulas bawang putih
sedikit halia
1 labu bawang besar dihiris
sedikit air santan or susu cair
sedikit air asam jawa
5 - 6 ekor udang galah kecik dibersihkan
gula & garam to taste

Cara2 membuatnya:

Cili kering ditumbuk dgn halia & bawang & udang kering hingga lumat. Then tumis hingga garing. Baru masuk asam jawa & santan or susu cair. Masuk gula & garam, bawang besar & udang galah. Gaul hingga masak & sambal hendaklah nampak pekat sikit. Jgn pekat sgt.

PS. Lupa nak cakap udang galah tu org rumah saya kail.

My very own churros at last



Having a hard time trying to fry the churros b'coz I couldn't find the acuan to pipe the dough. I even forgot to prepare the choc cream. It's okay b'coz churros is nice eaten just like that.

The Churros

Here's the ultimate recipe to make your own churros at home, just like they were at the churrería stands. Of course, the difference here is price. Here you can make a whole batch for what is cost for a few. Once you make the churros, you can make the authentic chocolate dip to dunk them in.

Ingredients: (Makes one platefull)
Vegetable or Olive Oil
1 cup water
1/2 cup margarine or butter
1/4 teaspoon salt
1 cup all-purpose flour
3 eggs
1/4 cup sugar
1/4 teaspoon ground cinnamon (optional)

Prepare to fry the churros by heating oil in a pan (1 to 1&1/2 inches) to 360 degrees F.

To make churro dough, heat water, margarine and salt to rolling boil in 3-quart saucepan; stir in flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute; remove from heat. Beat eggs all at once; continue beating until smooth and then add to saucepan while stirring mixture.

Spoon mixture into cake decorators' tube with large star tip (like the kind use to decorate cakes). Squeeze 4-inch strips of dough into hot oil. Fry 3 or 4 strips at a time until golden brown, turning once, about 2 minutes on each side. Drain on paper towels. (Mix Sugar and the optional cinnamon); roll churros in sugar or dump the sugar on the pile of churros, like the pros. That churro taste will take you right back to your favorite summer days walking the paseos of Spain.

Note: REAL churros in Spain are made without cinnamon mixed with the sugar, but the cinnamon adds an extra nice flavor.

Chocolate for Churro Dunking

4oz dark chocolate, chopped
2 cups milk
1 tbsp cornstarch (also known as cornflour and is the powder that causes the thickening)
4 tbsp sugar

Place the chocolate and half the milk in a pan and heat, stirring, until the chocolate has melted. Dissolve the cornstarch in the remaining milk and whisk into the chocolate with the sugar. Cook on low heat, whisking constantly, until the chocolate is thickened, about five minutes. Add extra cornstarch if it doesn't start to thicken after 5 minutes. Remove and whisk smooth. Pour and server in cups or bowls for dunking churros. Do not pour over churros, but use the mix for dunking churros after every bite. Served warm.

Ikan Salai Masak Lemak Cili Api

Pagi tadi check resipi kat Mesra. Jumpalah resipi & cuba buat ikan salai masak lemak cili api.



Bahan2nya:

Cili kering
Terung asam
Ikan salai
Serai
Santan
Serbuk kunyit or kunyit hidup
Garam & ajinomoto to taste

Cara2 membuatnya:-

Tumbuk cili kering yg dah direbus dgn air panas or digoreng hingga lumat. Lepas tu tumis bersama serai yg dah dihiris or ditumbuk & serbuk kunyit. Goreng garing baru bubuh sedikit air sampai keluar minyak. Baru masuk santan bersama terung asam & ikan salai. Bubuh garam & ajinomoto.

Bila dah masak boleh dihidangkan. Kalau kurang masam boleh bubuh asam keping.

PS. Sedap tak terkata! Tanyalah kat org rumah saya. Dia cakap dia tak pernah makan ikan salai dibuat gulai.

Kek Hawflakes

Bahan2nya:-



10 biji telur
16 oz mentega
1 gelas gula pasir
1/2 tin susu manis
1 gelas nestum
1 gelas tepung
5 hawflakes
1 sudu teh vanilla

Cara2 membuatnya:-

1. Mentega dicairkan bersama gula menggunakan api kecil. Lepas tu biarkan ia sejuk baru masuk telur satu persatu & blender sampai sebati.

2. Masukkan tepung, nestum, susu manis & vanilla. Blend hingga sebati. Baru masuk hawflakes.

3. Kukus selama 2 jam or hingga masak.

PS. Nanti saya paste gambar sebab saya dah buat dah.

Kalau nak bubuh bnyk hawflakes pun boleh tapi kurangkan gula sebab hawflakes ni manis walaupun masam.
